- 150g biscuits
- 80g butter
- 300g cream cheese, room temperature
- 100g sugar
- 2 eggs, room temperature
- 1 tsp vanilla extract
- 1.5 tbsp all purpose flour
- 1 tbsp lemon juice
- 200g sour cream, room temperature
Method
- Crush biscuits and mix with melted butter to form base.
- Press base mixture into mini cheesecake molds.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well.
- Mix in vanilla extract, flour, and lemon juice.
- Fold in sour cream gently.
- Pour filling over biscuit base in molds.
- Bake until set and edges are lightly golden.
- Cool completely before removing from molds.
