Ingredients

  • 150g biscuits
  • 80g butter
  • 300g cream cheese, room temperature
  • 100g sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 1.5 tbsp all purpose flour
  • 1 tbsp lemon juice
  • 200g sour cream, room temperature

Method

  1. Crush biscuits and mix with melted butter to form base.
  2. Press base mixture into mini cheesecake molds.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well.
  5. Mix in vanilla extract, flour, and lemon juice.
  6. Fold in sour cream gently.
  7. Pour filling over biscuit base in molds.
  8. Bake until set and edges are lightly golden.
  9. Cool completely before removing from molds.
