- 300 g potatoes, peeled and cut into chunks
- 75 g plain wheat flour, plus more if needed
- 1/2 tsp salt
- 1/4 tsp ground black pepper, optional
- 2 tbsp neutral oil, plus more as needed
Method
- Place the potatoes in a saucepan, cover them with cold water and add a small pinch of the measured salt.
- Bring to a boil and cook for 10 to 12 minutes, or until the potatoes are completely tender.
- Drain thoroughly and allow the potatoes to steam-dry for 2 minutes, then mash them until smooth.
- Mix in the remaining salt, optional black pepper and flour. Add a little additional flour only if necessary to form a soft dough that can be handled.
- Divide the dough into 8 equal portions and flatten each portion into a patty approximately 1 cm thick.
- Heat 1 tablespoon oil in a skillet over medium heat. Add half of the patties without overcrowding the pan.
- Cook for 2 to 3 minutes on each side until crisp and golden. Transfer to a plate and repeat with the remaining oil and patties.
- Serve the potato patties warm.
