- BANANA MILK PUDDING
- 4 bananas, sliced
- 1 litre milk
- 50 g condensed milk
- 200 g sugar
- 100 g cornflour
- 30 g butter
- CREAM TOPPING
- 250 g soft cream cheese
- 250 ml double cream
- 200 g desiccated coconut
- 13–15 drops food colouring, optional
Method
- Slice the bananas.
- Reserve a small amount of the milk in a bowl.
- Combine the remaining milk, condensed milk and sugar in a saucepan.
- Whisk the cornflour into the reserved cold milk until smooth.
- Gradually whisk the cornflour mixture into the saucepan.
- Cook over medium heat, stirring continuously.
- Continue cooking until the mixture thickens.
- Remove from the heat and stir in the butter.
- Fold in the sliced bananas.
- Pour the pudding into a serving dish or individual glasses.
- Cover the surface and leave to cool.
- Refrigerate for at least 4 hours.
- Whip the cream until it begins to thicken.
- Beat in the soft cream cheese until smooth.
- Spread or pipe the cream over the chilled pudding.
- Decorate with coconut and food colouring, if using.
- Serve chilled.
