- COLOURED BUTTERCREAM
- 80 g butter, softened
- 100 g icing sugar
- 150 g cream cheese
- Blue, pink and yellow food colouring
- SPONGE
- 2 eggs
- 1 pinch salt
- 100 g sugar
- 40 ml vegetable oil
- 10 g baking powder
- 150 ml milk
- 200 g plain flour
- FILLING AND DECORATION
- 200 g cream cheese
- 100 g sweetened condensed milk
- 30 g white chocolate
Method
- Preheat the oven to 170°C (338°F).
- Grease and line a shallow cake tin.
- Beat the softened butter, icing sugar and 150 g cream cheese until smooth.
- Divide the buttercream and tint the portions blue, pink and yellow.
- Whisk the eggs, salt and sugar until pale and foamy.
- Add the vegetable oil and milk.
- Sift in the flour and baking powder.
- Mix gently until the batter is smooth.
- Pour the batter into the prepared tin.
- Bake for approximately 15 minutes.
- Leave the sponge to cool completely.
- Mix the remaining 200 g cream cheese with the condensed milk.
- Crumble or divide the cooled sponge into six portions.
- Shape each portion around some cream cheese filling to form a ball.
- Chill the filled cake balls until firm.
- Pipe the coloured buttercream over the balls in strands to resemble wool.
- Melt the white chocolate and shape small decorative knitting needles.
- Attach the chocolate decorations and chill until ready to serve.
