Ingredients

  • olive oil
  • 500g beef shoulder and neck
  • 500g fatty pork ribs
  • 200g sausages
  • salt
  • pepper
  • 3 bay leaves
  • 1 onion
  • red wine
  • 3 cans chopped tomatoes
  • 2 tbsp tomato paste
  • water
  • bunch of basil

Method

  1. 1

    Cut beef and pork ribs into desired size.

    Cut sausages in half.

  3. 3

    Season meat and sausages with salt and pepper and mix.

  4. 4

    Add olive oil to pan and brown the meat mixture.

  5. 5

    Add bay leaves broken into pieces.

  6. 6

    Add chopped onion and sweat without burning.

  7. 7

    Pour in red wine and let alcohol evaporate.

  8. 8

    Add chopped tomatoes and tomato paste dissolved in wine.

  9. 9

    Add water to cover ingredients and stir.

  10. 10

    Add basil bunch.

    Simmer gently on low heat for two hours.

    Serve with tagliatelle and drizzle with olive oil.
