- olive oil
- 500g beef shoulder and neck
- 500g fatty pork ribs
- 200g sausages
- salt
- pepper
- 3 bay leaves
- 1 onion
- red wine
- 3 cans chopped tomatoes
- 2 tbsp tomato paste
- water
- bunch of basil
Method
- Cut beef and pork ribs into desired size.
- Cut sausages in half.
- Season meat and sausages with salt and pepper and mix.
- Add olive oil to pan and brown the meat mixture.
- Add bay leaves broken into pieces.
- Add chopped onion and sweat without burning.
- Pour in red wine and let alcohol evaporate.
- Add chopped tomatoes and tomato paste dissolved in wine.
- Add water to cover ingredients and stir.
- Add basil bunch.
- Simmer gently on low heat for two hours.
- Serve with tagliatelle and drizzle with olive oil.
