Chocolate Hazelnut Sandwich Cookies

Ingredients

• 120 g butter, softened
• 1 pinch salt
• 8 g vanilla sugar
• 80 g icing sugar
• 1 egg
• 280–300 g plain flour
• 1 tsp baking powder
• Chocolate-hazelnut spread, as needed
• Ground hazelnuts, as needed

Method

1. Beat the butter, salt, vanilla sugar and icing sugar until smooth.
2. Add the egg and mix until combined.
3. Mix the flour with the baking powder.
4. Add the flour mixture gradually until a soft dough forms.
5. Wrap and refrigerate the dough for 30 minutes.
6. Preheat the oven to 170°C (340°F).
7. Roll the chilled dough approximately 5 mm thick.
8. Cut out circles approximately 5 cm wide.
9. Cut a smaller centre from half of the circles.
10. Press a decorative pattern into the cookies if desired.
11. Arrange on lined baking trays.
12. Bake for approximately 15 minutes, until lightly golden around the edges.
13. Leave the cookies to cool completely.
14. Spread chocolate-hazelnut spread over each solid cookie.
15. Top with a cookie that has a centre cut-out.
16. Spread a thin layer of chocolate spread around the outside edge.
17. Roll the edge in ground hazelnuts.
18. Allow the filling to settle before serving.
