- 2.5 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- egg yolks
- egg whites
Method
- Add the sugar, salt, baking powder, and baking soda to the flour and whisk to combine.
- Make buttermilk by adding a few tablespoons of lemon juice or vinegar to whole milk and letting it stand for 5 to 10 minutes until curdled.
- Add the buttermilk, melted butter, and egg yolks to the dry ingredients and whisk until just combined.
- Separate the egg whites and beat them into soft peaks, then fold into the batter until just combined.
- Let the batter rest for 15 to 30 minutes.
- Heat a cast iron or non-stick pan over medium heat, add a tablespoon of butter, and let it melt.
- Pour about a third of a cup of batter for each pancake onto the pan.
- Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Serve with butter and maple syrup.
