Method

  3. Add the buttermilk, melted butter, and egg yolks to the dry ingredients and whisk until just combined.
  4. Separate the egg whites and beat them into soft peaks, then fold into the batter until just combined.
  5. Let the batter rest for 15 to 30 minutes.
  6. Heat a cast iron or non-stick pan over medium heat, add a tablespoon of butter, and let it melt.
  7. Pour about a third of a cup of batter for each pancake onto the pan.
  8. Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes until golden brown.
  9. Serve with butter and maple syrup.
