- 1 and 1/3 cups (160g) all-purpose flour
- 1 teaspoon salt
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 cup buttermilk
- 2 teaspoons vanilla extract
- 1 egg
- 4 tablespoons melted butter
- butter for greasing the pan
- maple syrup (for serving)
Method
- Add 1 and 1/3 cups of all-purpose flour, 1 teaspoon salt, 2 tablespoons sugar, and 1 tablespoon baking powder into a large bowl and sift together.
- Warm 1 cup of buttermilk in the microwave for about 45 seconds.
- Whisk 1 egg into the warm buttermilk.
- Stir in 4 tablespoons of melted butter into the buttermilk mixture.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a non-stick pan over low heat and add a little butter to melt.
- Pour about a third of a cup of batter for smaller pancakes or up to half a cup for larger pancakes into the pan.
- Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
- Serve with maple syrup and a pat of butter.
