  • 1 and 1/3 cups (160g) all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 egg
  • 4 tablespoons melted butter
  • butter for greasing the pan
  • maple syrup (for serving)

Method

9 steps
  1. Add 1 and 1/3 cups of all-purpose flour, 1 teaspoon salt, 2 tablespoons sugar, and 1 tablespoon baking powder into a large bowl and sift together.
  2. Warm 1 cup of buttermilk in the microwave for about 45 seconds.
  3. Whisk 1 egg into the warm buttermilk.
  4. Stir in 4 tablespoons of melted butter into the buttermilk mixture.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Heat a non-stick pan over low heat and add a little butter to melt.
  7. Pour about a third of a cup of batter for smaller pancakes or up to half a cup for larger pancakes into the pan.
  8. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
  9. Serve with maple syrup and a pat of butter.
