  • 100 g dark chocolate, at least 70%
  • 500 ml whole milk
  • 2 cinnamon sticks
  • 1 tbsp high quality cocoa powder
  • 1 tsp sugar
  • pinch of salt
  • vanilla extract

Method

10 steps
  1. Thinly chop 100g of dark chocolate and set aside.
  2. Pour 500 ml of whole milk into a saucepan on the stove.
  3. Add two cinnamon sticks and a little vanilla extract to the milk.
  4. Turn the heat to medium and whisk, cooking until the milk starts to boil and the cinnamon infuses, about 10 minutes.
  5. Remove the cinnamon sticks and turn off the heat.
  6. Add 1 tbsp of high quality cocoa powder and whisk to incorporate.
  7. Strain the mixture through a sieve to remove lumps and foam.
  8. Return the strained mixture to the stove with heat off.
  9. Add about 1 tsp of sugar and a pinch of salt, then turn the heat back on.
  10. Stir until the chocolate is completely melted.
