Ingredients
- 100 g dark chocolate, at least 70%
- 500 ml whole milk
- 2 cinnamon sticks
- 1 tbsp high quality cocoa powder
- 1 tsp sugar
- pinch of salt
- vanilla extract
Method
- Thinly chop 100g of dark chocolate and set aside.
- Pour 500 ml of whole milk into a saucepan on the stove.
- Add two cinnamon sticks and a little vanilla extract to the milk.
- Turn the heat to medium and whisk, cooking until the milk starts to boil and the cinnamon infuses, about 10 minutes.
- Remove the cinnamon sticks and turn off the heat.
- Add 1 tbsp of high quality cocoa powder and whisk to incorporate.
- Strain the mixture through a sieve to remove lumps and foam.
- Return the strained mixture to the stove with heat off.
- Add about 1 tsp of sugar and a pinch of salt, then turn the heat back on.
- Stir until the chocolate is completely melted.
