- 4 cups chopped fresh tomatoes
- 2 cups chicken broth
- 4 cloves garlic
- 1 large slice onion
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 teaspoons white sugar, or to taste
- 1 teaspoon salt, or to taste
Method
- Combine the chopped tomatoes, chicken broth, garlic and onion in a stockpot over medium heat.
- Bring to a boil, then reduce the heat and simmer gently for 15 to 20 minutes, until the vegetables have softened.
- Remove from the heat and pass the mixture through a food mill into a large bowl. Alternatively, blend until smooth and strain if desired.
- Return the empty stockpot to medium heat and melt the butter.
- Add the flour and whisk constantly until the roux turns medium brown.
- Gradually whisk a small amount of the tomato mixture into the roux, stirring until smooth.
- Stir in the remaining tomato mixture and heat through.
- Season with the sugar and salt to taste, then serve hot.
