Fudgy Brownies

Ingredients

• 90g butter
• 2 eggs
• 110g sugar
• 2g instant coffee
• 125g 70% chocolate
• 25g brown sugar
• 2g vanilla extract
• 2g salt
• 64g cake flour
• 6g chocolate powder

Method

1. Melt 90g butter over low heat until the milk proteins float to the surface and the color deepens.
2. Stop heating once the butter develops a rich, nutty aroma.
3. Mix 2g instant coffee with 3g hot water until dissolved.
4. Pour the cooled brown butter (around 50-60°C) over 125g of chopped 70% chocolate.
5. Add the prepared coffee mixture and stir until the chocolate is fully melted and combined.
6. Crack 2 eggs into a bowl at room temperature.
7. Add 110g sugar, 25g brown sugar, 2g vanilla extract, and 2g salt to the eggs.
8. Mix until the sugar dissolves and the mixture lightens in color.
9. Pour the chocolate-butter mixture into the egg mixture and stir well.
10. Sift 64g cake flour and 6g cocoa powder into the mixture.
11. Gently fold until no dry pockets remain, avoiding overmixing.
12. Pour the batter into a prepared baking pan and smooth the surface with a spatula.
13. Bake at 180°C (356°F) for 20 minutes until a crispy crust forms on top.
14. Allow to cool at room temperature, then remove from the pan.
15. Cut into small pieces and enjoy the crunchy exterior with a soft, moist interior.
