Ingredients
- 2kg ripe tomatoes
- 200g cucumber
- 1 medium bell or pointed bell pepper
- 1/4 red onion
- 1 clove of garlic
- 6-10 leaves of fresh basil
- ca 60-80 ml extra virgin olive oil
- ca 50-70 ml white balsamic vinegar
- pinch of red chili flakes
- salt
- black pepper
Method
- Combine ripe tomatoes, cucumber, bell pepper, red onion, garlic, and basil in a blender.
- Blend until smooth.
- Add extra virgin olive oil, white balsamic vinegar, red chili flakes, salt, and black pepper.
- Blend again until well mixed.
- Chill in the refrigerator before serving.
