Ingredients

  • 2kg ripe tomatoes
  • 200g cucumber
  • 1 medium bell or pointed bell pepper
  • 1/4 red onion
  • 1 clove of garlic
  • 6-10 leaves of fresh basil
  • ca 60-80 ml extra virgin olive oil
  • ca 50-70 ml white balsamic vinegar
  • pinch of red chili flakes
  • salt
  • black pepper

Method

  1. Combine ripe tomatoes, cucumber, bell pepper, red onion, garlic, and basil in a blender.
  2. Blend until smooth.
  3. Add extra virgin olive oil, white balsamic vinegar, red chili flakes, salt, and black pepper.
  4. Blend again until well mixed.
  5. Chill in the refrigerator before serving.
