- 2 large zucchini
- 5 potatoes
- 4 mushrooms
- 1 onion
- 3 garlic cloves
- 150 g ricotta
- 100 g cheddar
- olive oil
- butter
- salt
- pepper
- fresh dill
Method
- Halve zucchini lengthwise, remove pulp carefully.
- Cook potatoes in salted water until soft.
- Finely chop mushrooms and onion.
- Sauté zucchini cubes, mushrooms, and onion in olive oil for 5 minutes.
- Season with salt and pepper.
- Remove from heat, add minced garlic and ricotta.
- Arrange zucchini halves in a greased dish, fill with mixture.
- Sprinkle with grated cheddar.
- Bake at 200°C (400°F) for 25 minutes.
- Drain cooked potatoes, mash with butter and milk.
- Season potato puree with salt and dill.
- Mix Greek yogurt, mustard, minced garlic, salt, and pepper for sauce.
- Serve hot stuffed zucchini with potato puree and sauce.
