  • 2 large zucchini
  • 5 potatoes
  • 4 mushrooms
  • 1 onion
  • 3 garlic cloves
  • 150 g ricotta
  • 100 g cheddar
  • olive oil
  • butter
  • salt
  • pepper
  • fresh dill

Method

  1. 1

    Halve zucchini lengthwise, remove pulp carefully.

    Cook potatoes in salted water until soft.

    Finely chop mushrooms and onion.

    Sauté zucchini cubes, mushrooms, and onion in olive oil for 5 minutes.

    Season with salt and pepper.

    Remove from heat, add minced garlic and ricotta.

    Arrange zucchini halves in a greased dish, fill with mixture.

    Sprinkle with grated cheddar.

    Bake at 200°C (400ýf) for 25 minutes.

    Drain cooked potatoes, mash with butter and milk.

    Season potato puree with salt and dill.

    Mix Greek yogurt, mustard, minced garlic, salt, and pepper for sauce.
