Lucky Mushroom Chocolate Biscuit Cakes

Ingredients

• CHOCOLATE BISCUIT MIXTURE
• 120 g sugar
• 40 g cocoa powder
• 200 ml milk
• 60 g butter
• 1 tsp vanilla extract
• Finely grated zest and juice of 1 orange
• 300 g plain butter biscuits, crushed
• 30 g cashews or walnuts, chopped
• DECORATION
• 400 g white chocolate
• 30 ml neutral vegetable oil
• Desiccated coconut, as needed
• Red oil-based food colouring

Method

1. Combine the sugar, cocoa powder and milk in a saucepan.
2. Bring the mixture gently to the boil while stirring.
3. Add the butter and stir until melted.
4. Add the vanilla, orange zest and orange juice.
5. Remove from the heat.
6. Stir in the crushed biscuits and chopped nuts.
7. Mix until evenly combined.
8. Leave the mixture to cool until firm enough to shape.
9. Divide into approximately 10 portions.
10. Shape each portion into a mushroom stem and cap.
11. Chill the shaped pieces until firm.
12. Melt 300 g of the white chocolate with 20 ml vegetable oil.
13. Coat the mushroom stems with the white chocolate.
14. Sprinkle the stems with desiccated coconut.
15. Melt the remaining 100 g white chocolate with the remaining oil.
16. Colour it red with oil-based food colouring.
17. Coat the mushroom caps with the red chocolate.
18. Add small white chocolate spots to the caps.
19. Chill until completely set.
