- 6 potatoes
- 1 carrot
- 1 onion
- 5-6 fresh green onions
- 3 eggs
- 1 cup milk (200 ml)
- 80 g whole wheat flour
- 2-3 tbsp olive oil
- salt
- black pepper
- olive oil for frying
- 4 tomatoes
- parsley
- 200 g mozzarella cheese
Method
- Grate the potatoes, carrot, and onion.
- Chop the fresh green onions.
- In a bowl, mix grated vegetables with eggs, milk, and whole wheat flour.
- Add salt, black pepper, and olive oil to the mixture.
- Heat olive oil in a frying pan.
- Pour the mixture into the pan and cook until golden on one side.
- Flip and cook the other side until done.
- Top with sliced tomatoes, parsley, and mozzarella cheese.
- Cover and cook until cheese melts.
- Serve hot.
