- 150 g blueberries
- 25 g cornstarch
- 60 g water
- 40 g sugar
- 250 g cream 33%
- 5 g gelatin
- 55 g powdered sugar
- 2 eggs
- 35 g vegetable oil
- 130 g sugar
- 115 g flour
- a pinch of baking powder
- 10 g chocolate
Method
- Put 150 g blueberries in a pot.
- Mix 35 g water with 25 g cornstarch.
- Add the mixture and 40 g sugar to the blueberries.
- Heat the berry mixture over low heat until it thickens.
- Fill the berry mixture into a piping bag.
- Whip 250 g cream with 55 g powdered sugar until stiff.
- Add about 60 g berry filling to the cream and mix gently.
- Dissolve 5 g gelatin in 25 g water and melt it.
- Combine the gelatin with the cream-berry mixture.
- Fill the mixture into dessert molds and chill for 2 hours.
- Beat 2 eggs with a pinch of salt and 130 g sugar until frothy.
- Add 35 g vegetable oil and mix.
- Sift 115 g flour and a pinch of baking powder into the dough.
- Bake the dough for 10-15 minutes at 170°C.
- Cut out circles from the cake.
- Chop and melt 10 g chocolate.
- Garnish the dessert molds with cake pieces, chocolate, and fresh blueberries.
