  • ½ kg shrimp, peeled
  • 1 pc. egg
  • 1 tsp. salt
  • 1 tbsp. calamansi juice or lemon juice
  • ½ cup potato starch
  • 2 cups crushed pineapple
  • ½ cup honey
  • ½ cup gochujang
  • pinch of salt
  • slurry (corn starch diluted in water)
  • sesame oil
  • spring onions (for garnish)

Method

11 steps
  1. Season the peeled shrimp with salt and calamansi juice or lemon juice.
  2. Add an egg and potato starch to the seasoned shrimp and coat evenly.
  3. Heat oil in a pan and fry the coated shrimp in batches until crispy and golden brown.
  4. Remove the fried shrimp and set aside.
  5. Prepare the pineapple sauce by blending crushed pineapple with honey and gochujang.
  6. Pour the blended mixture into a pan and bring to a boil.
  7. Add slurry to the boiling mixture to thicken the sauce, stirring continuously.
  8. Taste and adjust seasoning if needed, adding soy sauce or salt as desired.
  9. Finish the sauce by adding a splash of sesame oil.
  10. Toss the fried shrimp in the sauce or serve the sauce over the shrimp.
  11. Garnish with spring onions and serve with rice.
