  • 1 kilo chicken fillet
  • 1 cup all-purpose flour
  • 1½ cup rice flour
  • 2 cups water, plus additional as needed
  • 1 tsp. chicken powder
  • pinch of salt
  • pinch of baking powder
  • 2 cups orange juice
  • ½ cup brown sugar
  • ½ cup honey
  • ½ cup oyster sauce
  • 2 tbsps. hoisin sauce
  • ¼ cup cornstarch dissolved in vinegar
  • 1 tbsp. grated ginger
  • ½ tsp. red chili flakes

Method

10 steps
  1. Season chicken fillet with ginger powder or grated fresh ginger and salt.
  2. Prepare batter by mixing all-purpose flour, rice flour, chicken powder, baking powder, salt, and water until smooth and thick.
  3. Deep fry the seasoned chicken in hot oil until golden brown and crispy.
  4. In a saucepan, combine orange juice, brown sugar, honey, oyster sauce, hoisin sauce, grated ginger, and chili flakes.
  5. Bring the sauce to a full boil.
  6. Mix cornstarch with vinegar to create a slurry.
  7. Add the slurry to the boiling sauce and cook until thickened.
  8. Toss the fried chicken in the thickened honey orange sauce.
  9. Prepare egg fried rice by whipping eggs, adding rice and soy sauce, and frying until rice is heated through and slightly crispy.
  10. Serve the coated chicken with egg fried rice, optionally with fortune cookies.
