Ingredients
- 1 15-ounce can (1½ cup or 250g) black beans, drained and rinsed
- 1 cup (180g) soft pitted medjool dates
- ½ cup + 2 tbsp (150ml) plant-based non-dairy milk
- 2 tbsp (30ml) almond butter (or other nut/seed butter)
- 3/4 cup (72g) cocoa powder
- 2 tsp vanilla extract
- 2 to 3 tbsp maple syrup, adjust to sweetness preference, optional
- 3/4 tsp baking powder
- ¼ tsp salt
- 1/3 to 1/2 cup chocolate chips
- 1/8 to 1/4 cup chopped nuts (optional)
- pinch or two large flakey sea salt (optional)
Method
- Drain and rinse the black beans.
- Blend the black beans, medjool dates, plant-based milk, almond butter, cocoa powder, vanilla extract, maple syrup (if using), baking powder, and salt until smooth.
- Fold in the chocolate chips and chopped nuts if using.
- Pour the batter into a prepared baking pan.
- Sprinkle large flakey sea salt on top if desired.
- Bake until set and a toothpick inserted comes out mostly clean.
