Ingredients

  • 1 15-ounce can (1½ cup or 250g) black beans, drained and rinsed
  • 1 cup (180g) soft pitted medjool dates
  • ½ cup + 2 tbsp (150ml) plant-based non-dairy milk
  • 2 tbsp (30ml) almond butter (or other nut/seed butter)
  • 3/4 cup (72g) cocoa powder
  • 2 tsp vanilla extract
  • 2 to 3 tbsp maple syrup, adjust to sweetness preference, optional
  • 3/4 tsp baking powder
  • ¼ tsp salt
  • 1/3 to 1/2 cup chocolate chips
  • 1/8 to 1/4 cup chopped nuts (optional)
  • pinch or two large flakey sea salt (optional)

Method

  1. 1Drain and rinse the black beans.
  2. 2Blend the black beans, medjool dates, plant-based milk, almond butter, cocoa powder, vanilla extract, maple syrup (if using), baking powder, and salt until smooth.
  3. 3Fold in the chocolate chips and chopped nuts if using.
  4. 4Pour the batter into a prepared baking pan.
  5. 5Sprinkle large flakey sea salt on top if desired.
  6. 6Bake until set and a toothpick inserted comes out mostly clean.
