  • 1 cup packed / 230 grams soft pitted medjool dates
  • 2 tbsp creamy almond butter (or other nut/seed butter of choice)
  • 4 tbsp maple syrup (or other liquid sweetener of choice)
  • 3/4 teaspoon vanilla extract
  • pinch flakey sea salt (optional)
  • 1 cup chopped roasted pecans
  • 7–9 oz or 1¼–1½ cups chopped chocolate (or chocolate chips)

Method

    Make a soft date caramel by blending medjool dates, almond butter, maple syrup, vanilla extract, and a pinch of sea salt until smooth.

    Chop the roasted pecans and set aside.

    Melt the chocolate smoothly using your preferred method.

    Form small clusters of the date caramel and pecans.

    Dip or coat the clusters in the melted chocolate to form turtles.

    Place the coated turtles on a tray and allow the chocolate to set.
