Ingredients
- 1 cup packed / 230 grams soft pitted medjool dates
- 2 tbsp creamy almond butter (or other nut/seed butter of choice)
- 4 tbsp maple syrup (or other liquid sweetener of choice)
- 3/4 teaspoon vanilla extract
- pinch flakey sea salt (optional)
- 1 cup chopped roasted pecans
- 7–9 oz or 1¼–1½ cups chopped chocolate (or chocolate chips)
Method
- Make a soft date caramel by blending medjool dates, almond butter, maple syrup, vanilla extract, and a pinch of sea salt until smooth.
- Chop the roasted pecans and set aside.
- Melt the chocolate smoothly using your preferred method.
- Form small clusters of the date caramel and pecans.
- Dip or coat the clusters in the melted chocolate to form turtles.
- Place the coated turtles on a tray and allow the chocolate to set.
