  • 230 g soft pitted Medjool dates
  • 2 tablespoons creamy almond butter or another nut or seed butter
  • 4 tablespoons maple syrup or another liquid sweetener
  • 3/4 teaspoon vanilla extract
  • Pinch flaky sea salt, optional
  • 1 cup chopped roasted pecans
  • 200–255 g dark chocolate or chocolate chips

Method

7 steps
  1. Blend the dates, almond butter, maple syrup, vanilla and optional salt until a smooth, soft caramel forms.
  2. Chop the roasted pecans.
  3. Melt the chocolate gently until smooth.
  4. Portion the date caramel into about 16 small pieces.
  5. Combine each portion with chopped pecans and shape into a small turtle cluster.
  6. Coat or dip each cluster in melted chocolate.
  7. Place on a lined tray and chill for about 30 minutes, until the chocolate is set.

  • Use soft Medjool dates; soak and drain firmer dates before blending.
