- 110g yellow onion
- 30g vegetable oil
- 30g butter
- 75g carrot
- 300g potatoes
- 2000g water
- 500ml whole milk
- 150g red bell pepper
- 10g fresh garlic
- 300g red lentils
- 150g tomatoes
- 100g fresh spinach
- 15g fresh dill
- 0.7g saffron
- 4g ground turmeric
- 3g ground coriander
- 12g salt
- 1.2g ground black pepper
Method
- Sauté chopped onion in vegetable oil and butter until translucent.
- Add chopped carrot, potatoes, and minced garlic; cook for a few minutes.
- Add chopped tomatoes and red bell pepper; cook until softened.
- Pour in water and bring to a boil.
- Add lentils, saffron, turmeric, coriander, salt, and black pepper.
- Simmer until lentils and vegetables are tender.
- Stir in milk and chopped spinach; cook until spinach wilts.
- Add chopped dill and adjust seasoning as needed.
- Serve hot.
