- 200 g carrots
- 2 eggs
- 2-3 tbsp date syrup
- 1 tsp baking powder
- 200 g ground almonds
- 150 g quark or cottage cheese
- 25 g soft butter
- 1 tsp maple syrup or agave nectar
Method
- Grate carrots.
- Whisk eggs with date syrup.
- Stir in ground almonds and baking powder.
- Fold in grated carrots.
- Pour batter into a baking pan.
- Bake at 160 °C (256 °F) for 40-45 minutes.
- For the cream, mix quark or cottage cheese with soft butter and maple syrup.
- Spread the cream on the cake after baking.
