- 300 g all purpose flour
- 1/4 tsp salt
- 150 g water
- 2 stalks of green onion
- 300 g cabbage
- 1 tsp salt
- 1 tbsp sesame oil
- 200 g minced pork/chicken/beef
- 1 egg
- 1 tsp sugar
- 2 tbsp soy sauce
- 2 tsp corn starch
- 2 tbsp sesame oil
- 2 tbsp oil
- 4 cloves of garlic
- 1/4 cup soy sauce
- 2 tsp sugar
Method
- Mix all-purpose flour and 1/4 tsp salt in a large bowl. Add 150 g water gradually and stir until the dough forms. Knead until smooth, then cover and let rest for 30 minutes.
- Prepare the dipping sauce by heating 2 tbsp oil over medium low heat, add crushed garlic, cook until fragrant, then add soy sauce and sugar, boil and set aside.
- Dice the cabbage, add 1 tsp salt, mix evenly, and let sweat for 20 minutes. Finely chop green onion.
- Prepare the meat filling by combining minced meat, egg, sugar, 1/4 tsp salt, 2 tsp corn starch, and 2 tbsp sesame oil. Stir until glutty.
- Squeeze out excess moisture from the cabbage. Mix cabbage, green onion, and 2 tbsp sesame oil with the meat mixture.
- Divide rested dough into halves. Roll each into a long loaf, cut into small pieces about 1 tablespoon in size. Flatten and roll into thin wrappers.
- Place about one spoon of filling in the center of each wrapper. Fold the wrapper and pinch the top, then make folds in the outer layer and pinch to seal, forming a dumpling.
- Serve dumplings with dipping sauce. Optionally, pan-fry to make pot stickers.
