  • about 1 inch of water
  • a ham (type not specified, but cooked at 325°F for 20 minutes before glazing)
  • a bunch of brown sugar
  • honey
  • Dijon mustard
  • rice vinegar
  • cayenne pepper
  • black pepper
  • Worcestershire sauce

Method

10 steps
  1. Set up a roasting pan with a rack, add a couple of whole star anise and a bunch of whole cloves, pour in about an inch of water, and place the ham on the rack.
  2. Pat the outside of the ham dry with paper towels if wet or slimy.
  3. Score the ham with a sharp knife, making cuts about 1/2 inch apart and 1/4 inch deep all over the surface, both across and up and down.
  4. Preheat the oven to 325°F and bake the ham for 20 minutes.
  5. Make the glaze by mixing brown sugar, honey, Dijon mustard, rice vinegar, cayenne pepper, black pepper, and Worcestershire sauce until thick and brushable.
  6. Remove the ham from the oven, brush with the glaze, and return to the oven for another 20 minutes.
  7. Repeat glazing every 20 minutes until the internal temperature reaches 130°F, approximately 18 minutes per pound.
  8. During the final glazing, drip some of the flavored water from underneath onto the ham to enhance flavor.
  9. Once the ham reaches 130°F, use a blowtorch to caramelize the surface for a crispy, crackling finish, moving the torch evenly over the surface.
  10. Transfer the ham to a serving platter, place on a bed of kale, and garnish with small apples or similar decorative fruit.
