Ingredients
- 250 g lentils
- 1200 g (1.2 L) broth
- 400 g crushed tomatoes
- 150 g onion
- 120 g carrot
- 45 g (3 tbsp) olive oil
- 150 g feta cheese
- 30 g tomato paste
- 15 g (3 cloves) garlic
- 1 lime (juice and zest)
- 30 g fresh herbs (dill, parsley)
- 5 g spices (oregano, cumin, rosemary)
- 2 bay leaves
- Salt and pepper to taste
Method
- Heat olive oil in a pot over medium heat.
- Add chopped onion, carrot, and garlic; sauté until softened.
- Add tomato paste and spices; cook for a minute to release flavors.
- Add lentils, crushed tomatoes, broth, and bay leaves.
- Bring to a boil, then reduce heat and simmer until lentils are tender.
- Remove bay leaves and season with salt and pepper to taste.
- Stir in fresh herbs and lime juice and zest.
- Serve hot topped with crumbled feta cheese.
