  • 250 g lentils
  • 1200 g (1.2 L) broth
  • 400 g crushed tomatoes
  • 150 g onion
  • 120 g carrot
  • 45 g (3 tbsp) olive oil
  • 150 g feta cheese
  • 30 g tomato paste
  • 15 g (3 cloves) garlic
  • 1 lime (juice and zest)
  • 30 g fresh herbs (dill, parsley)
  • 5 g spices (oregano, cumin, rosemary)
  • 2 bay leaves
  • Salt and pepper to taste

Method

8 steps
  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion, carrot, and garlic; sauté until softened.
  3. Add tomato paste and spices; cook for a minute to release flavors.
  4. Add lentils, crushed tomatoes, broth, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer until lentils are tender.
  6. Remove bay leaves and season with salt and pepper to taste.
  7. Stir in fresh herbs and lime juice and zest.
  8. Serve hot topped with crumbled feta cheese.

Helpful tips

  • Simmer the lentils until tender, adding a little more broth if the soup becomes too thick.
  • Remove the bay leaves before serving.
