Ingredients

  • 250 g lentils
  • 1200 g (1.2 L) broth
  • 400 g crushed tomatoes
  • 150 g onion
  • 120 g carrot
  • 45 g (3 tbsp) olive oil
  • 150 g feta cheese
  • 30 g tomato paste
  • 15 g (3 cloves) garlic
  • 1 lime (juice and zest)
  • 30 g fresh herbs (dill, parsley)
  • 5 g spices (oregano, cumin, rosemary)
  • 2 bay leaves
  • Salt and pepper to taste

Method

    Heat olive oil in a pot over medium heat.

    Add chopped onion, carrot, and garlic; sauté until softened.

    Add tomato paste and spices; cook for a minute to release flavors.

    Add lentils, crushed tomatoes, broth, and bay leaves.

    Bring to a boil, then reduce heat and simmer until lentils are tender.

    Remove bay leaves and season with salt and pepper to taste.

    Stir in fresh herbs and lime juice and zest.
