Ingredients
- 500g chicken thighs
- 200g mushrooms
- 1 onion
- 2 cloves garlic
- 100ml chicken stock
- 1 tbsp olive oil
- 1 sheet puff pastry
- 1 egg
- Salt
- Pepper
Method
- Preheat oven to 200C.
- Chop chicken thighs into chunks.
- Slice mushrooms and dice onion.
- Heat olive oil in a pan and cook onion and garlic until soft.
- Add chicken and cook until browned.
- Add mushrooms and cook for 5 minutes.
- Pour in chicken stock and simmer until thickened.
- Season with salt and pepper.
- Transfer mixture to a pie dish.
- Cover with puff pastry and seal edges.
- Brush pastry with beaten egg.
- Bake for 20 minutes until golden and puffed.
