  • 450 g lean ground beef
  • 1 large potato, approximately 300 g
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp dried or fresh dill, optional
  • 2 tbsp olive oil or other neutral oil, for frying

Method

  1. Peel the potato and grate it coarsely.
  2. Place the grated potato in a clean tea towel or several layers of kitchen paper.
  3. Squeeze firmly to remove as much excess moisture as possible.
  4. Transfer the potato to a large bowl.
  5. Add the ground beef, salt, black pepper and optional dill.
  6. Mix gently until evenly combined.
  7. Divide the mixture into eight equal portions.
  8. Shape each portion into a thin patty.
  9. Heat 1 tablespoon oil in a large frying pan over medium heat.
  10. Add half of the patties.
  11. Cook for 3–4 minutes on each side, until browned and completely cooked through.
  12. Transfer to a plate and repeat with the remaining oil and patties.
  13. Check that the centres have reached at least 75°C.
  14. Serve immediately while hot.

Additional tips

  • Handle raw ground beef carefully and clean all contacted hands, utensils and surfaces. Cook every patty completely through to an internal temperature of at least 75°C.
