  • 450 g lean ground beef
  • 1 large potato, approximately 300 g
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp neutral oil, for frying

Method

  1. Peel the potato and grate it coarsely into a clean tea towel or several layers of kitchen paper.
  2. Squeeze the grated potato firmly to remove as much excess moisture as possible.
  3. Place the potato in a bowl and add the ground beef, salt and black pepper.
  4. Mix until evenly combined, without excessively compressing the meat.
  5. Divide the mixture into eight equal portions and shape each one into a thin patty.
  6. Heat 1 tablespoon oil in a large skillet over medium heat.
  7. Add half of the patties and cook for 3 to 4 minutes on each side, until browned and completely cooked through.
  8. Transfer the cooked patties to a plate and repeat with the remaining oil and patties.
  9. Check that the centres have reached at least 75°C, then serve while hot.

Additional tips

  • Handle raw ground beef carefully and clean all contacted hands, utensils and surfaces. Cook every patty completely through to an internal temperature of at least 75°C.
