  • water
  • slices of bread
  • red bell pepper
  • oregano
  • processed cheese (Schmelzkäse)
  • salt
  • pepper
  • fresh parsley (optional, for garnish)

Method

6 steps
  1. Heat vegetable oil in a pot. Add chopped onion and minced garlic; sauté until translucent.
  2. Add chopped carrot, potato, and zucchini to the pot. Pour in water to cover the vegetables. Bring to a boil and cook for about 20 minutes until vegetables are tender.
  3. While the soup is cooking, prepare the croutons: cut bread slices into cubes, toss with a little vegetable oil, and bake at 180°C (356°F) for 10-15 minutes until crispy.
  4. Once vegetables are cooked, use an immersion blender to puree the soup until smooth and homogeneous. Return to heat if necessary.
  5. Add processed cheese to the soup, stirring until melted and well incorporated. Season with salt, pepper, and oregano to taste.
  6. Serve the hot soup garnished with chopped parsley and accompanied by homemade croutons.
