  • fresh parsley, chopped
  • thyme

Method

6 steps
  1. Combine zucchini, onion, carrot, parsnip, celery root, bell pepper, and tomato in a large pot.
  2. Add chicken broth and thyme, then bring to a boil over medium-high heat.
  3. Reduce heat to low and simmer until vegetables are tender, about 20-25 minutes.
  4. Use an immersion blender or transfer the mixture to a blender to puree until smooth.
  5. Stir in cream and season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley if desired.
