Ingredients
- 250 g chickpeas (cooked or canned)
- 1 small onion
- 2 cloves garlic
- 1 tbsp lemon juice
- 2 tbsp oats
- 1 tsp cumin
- 1 tsp smoked paprika
- to taste salt & pepper
- 1 tbsp olive oil
- 100 g plant-based yogurt (e.g. soy or coconut)
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp maple syrup
- a pinch paprika
- 1 clove garlic (grated)
- 1 handful fresh herbs (e.g. parsley & dill)
- to taste salt & pepper
Method
- In a bowl, roughly puree the chickpeas, onion, garlic, lemon juice, oats, cumin, smoked paprika, salt, and pepper.
- Form the mixture into small balls.
- Heat olive oil in a pan and fry the chickpea balls all around until golden brown (about 4–5 minutes).
- For the lemon herb sauce, mix plant-based yogurt, lemon juice, lemon zest, maple syrup, paprika, grated garlic, fresh herbs, salt, and pepper.
- Serve the chickpea balls with the sauce.
