Ingredients
- 2 tablespoons gochujang
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- 2 teaspoons sesame seeds, plus extra to serve
- 300g beef mince
- 3 tablespoons vegetable oil, divided
- 3 eggs, lightly whisked
- 4 garlic cloves, roughly chopped
- 1 onion, finely diced
- 1 cup sliced cabbage
- 1/2 cup shredded carrot
- 1/2 cup bean shoots
- 4 cups cooked rice
- 1/4 cup finely sliced spring onion, plus extra to serve
Method
- In a small bowl, mix the gochujang, soy sauce, sesame oil and sesame seeds until combined.
- Add 3 tablespoons of the sauce to the beef mince and mix well. Reserve the remaining sauce for later.
- Heat 1 tablespoon of the vegetable oil in a wok over medium-high heat. Add the eggs and cook as an omelette until set on both sides.
- Transfer the omelette to a board, roughly chop it and set aside.
- Return the wok to medium-high heat and add the remaining 2 tablespoons vegetable oil.
- Add the garlic and onion and stir-fry until fragrant and softened.
- Add the beef mixture and stir-fry until almost cooked through.
- Add the cabbage, carrot and bean shoots and stir-fry until the vegetables are just wilted.
- Add the cooked rice and the reserved sauce. Stir-fry until the rice is hot and evenly coated.
- Add the chopped omelette and spring onion and toss until combined.
- Serve topped with extra spring onion and sesame seeds.
