Ingredients
- jasmine rice
- ginger
- chicken thighs
- sesame oil
- spring onion
Equipment
- Rice cooker
- Fine-mesh sieve or bowl for rinsing rice
- Knife
- Chopping board
- Meat thermometer
- Rice paddle or fork
Method
- Rinse jasmine rice three times until the water runs clear, then drain.
- Place the rinsed rice into the rice cooker.
- Loosely cut a piece of ginger and slice it thinly.
- Rub sesame oil over the chicken thighs.
- Place the chicken thighs skin side up on top of the rice in the rice cooker.
- Close the rice cooker and cook on the normal white rice setting for about 35 minutes.
- Check that the chicken reaches an internal temperature of around 70°C (158°F).
- Pull the chicken out carefully once cooked.
- Fluff the rice with a fork or rice paddle.
- Slice spring onion for topping.
Helpful tips
- Rinse the rice until the water is mostly clear to prevent it becoming overly sticky.
- Use chicken thighs of a similar size so they cook evenly.
- Check the chicken in its thickest part with a clean meat thermometer before serving.
- Allow the chicken to rest briefly before slicing.
- Do not overfill the rice cooker beyond its stated capacity.
Storage
Cool the chicken and rice quickly and refrigerate within 2 hours. Store in an airtight container for up to 2 days and reheat only once until piping hot throughout.
