Ingredients

  • jasmine rice
  • ginger
  • chicken thighs
  • sesame oil
  • spring onion

Equipment

  • Rice cooker
  • Fine-mesh sieve or bowl for rinsing rice
  • Knife
  • Chopping board
  • Meat thermometer
  • Rice paddle or fork

Method

  1. Rinse jasmine rice three times until the water runs clear, then drain.
  2. Place the rinsed rice into the rice cooker.
  3. Loosely cut a piece of ginger and slice it thinly.
  4. Rub sesame oil over the chicken thighs.
  5. Place the chicken thighs skin side up on top of the rice in the rice cooker.
  6. Close the rice cooker and cook on the normal white rice setting for about 35 minutes.
  7. Check that the chicken reaches an internal temperature of around 70°C (158°F).
  8. Pull the chicken out carefully once cooked.
  9. Fluff the rice with a fork or rice paddle.
  10. Slice spring onion for topping.

Helpful tips

  • Rinse the rice until the water is mostly clear to prevent it becoming overly sticky.
  • Use chicken thighs of a similar size so they cook evenly.
  • Check the chicken in its thickest part with a clean meat thermometer before serving.
  • Allow the chicken to rest briefly before slicing.
  • Do not overfill the rice cooker beyond its stated capacity.

Storage

Cool the chicken and rice quickly and refrigerate within 2 hours. Store in an airtight container for up to 2 days and reheat only once until piping hot throughout.
