Lazy Chicken and Rice Dinner
A simple one-pot rice-cooker meal in which chicken thighs cook directly over fragrant jasmine rice with ginger, sesame oil and spring onion.

Method
- Rinse jasmine rice three times until the water runs clear, then drain.
- Place the rinsed rice into the rice cooker.
- Loosely cut a piece of ginger and slice it thinly.
- Rub sesame oil over the chicken thighs.
- Place the chicken thighs skin side up on top of the rice in the rice cooker.
- Close the rice cooker and cook on the normal white rice setting for about 35 minutes.
- Check that the chicken reaches an internal temperature of around 70°C (158°F).
- Pull the chicken out carefully once cooked.
- Fluff the rice with a fork or rice paddle.
- Slice spring onion for topping.
