- 1 cup (200 g) lentils
- 3 eggs
- Salt to taste
- 1 avocado
- 2 tbsp Greek yogurt
- 2 tbsp chopped parsley
- 1 tbsp finely grated Parmesan cheese
- Salt and black pepper to taste
- Lemon juice
- 1 tbsp olive oil
- 1 tbsp pumpkin seeds
- 3 garlic cloves
- 1 cup chopped spinach
- Parmesan cheese for serving
Method
- Cook 1 cup (200 g) lentils until tender.
- In a blender, combine cooked lentils, 3 eggs, salt, and lemon juice; blend until smooth.
- Form the lentil mixture into noodle shapes or cook as per preferred method.
- In a bowl, mash 1 avocado and mix with 2 tbsp Greek yogurt, chopped parsley, grated Parmesan cheese, salt, black pepper, and lemon juice to make the sauce.
- Heat 1 tbsp olive oil in a pan.
- Add 3 garlic cloves and sauté until fragrant.
- Add chopped spinach and cook until wilted.
- Combine cooked lentil noodles with the spinach and garlic mixture.
- Serve topped with the avocado sauce, pumpkin seeds, and additional Parmesan cheese if desired.
