Ingredients

  • 1 cup (200 g) lentils
  • 3 eggs
  • Salt to taste
  • 1 avocado
  • 2 tbsp Greek yogurt
  • 2 tbsp chopped parsley
  • 1 tbsp finely grated Parmesan cheese
  • Salt and black pepper to taste
  • Lemon juice
  • 1 tbsp olive oil
  • 1 tbsp pumpkin seeds
  • 3 garlic cloves
  • 1 cup chopped spinach
  • Parmesan cheese for serving

Method

  1. 1

    Cook 1 cup (200 g) lentils until tender.

    In a blender, combine cooked lentils, 3 eggs, salt, and lemon juice; blend until smooth.

    Form the lentil mixture into noodle shapes or cook as per preferred method.

    In a bowl, mash 1 avocado and mix with 2 tbsp Greek yogurt, chopped parsley, grated Parmesan cheese, salt, black pepper, and lemon juice to make the sauce.

    Heat 1 tbsp olive oil in a pan.

    Add 3 garlic cloves and sauté until fragrant.

    Add chopped spinach and cook until wilted.

    Combine cooked lentil noodles with the spinach and garlic mixture.

    Serve topped with the avocado sauce, pumpkin seeds, and additional Parmesan cheese if desired.
