Method
- Boil the potatoes for about 20 to 25 minutes until soft.
- Drain the potatoes and break them up to your desired texture.
- Add butter, salt, ground black pepper, onion powder, garlic and herb seasoning, and mix well.
- Loosen the mixture with heavy cream until you reach your desired consistency.
- Add sour cream and mayo into the mixture and incorporate fully.
- Taste the mixture and adjust seasoning by adding garlic powder and Italian seasoning.
- Fold in white sharp cheddar cheese, Mexican cheese, and crispy bacon.
- Prepare a 9 by 13 casserole dish with butter to prevent sticking.
- Transfer the potato mixture into the casserole dish and smooth it out.
- Combine remaining sharp cheddar and Mexican cheese and sprinkle on top.
- Optionally add chives, green onions, or jalapenos.
- Preheat the oven to 375° F and bake uncovered for 25 to 30 minutes until the cheese is melted.
- Remove from the oven and enjoy.
