Method

Boil the potatoes for about 20 to 25 minutes until soft.

Drain the potatoes and break them up to your desired texture.

Add butter, salt, ground black pepper, onion powder, garlic and herb seasoning, and mix well.

Loosen the mixture with heavy cream until you reach your desired consistency.

Add sour cream and mayo into the mixture and incorporate fully.

Taste the mixture and adjust seasoning by adding garlic powder and Italian seasoning.

Fold in white sharp cheddar cheese, Mexican cheese, and crispy bacon.

Prepare a 9 by 13 casserole dish with butter to prevent sticking.
