- 1/4 cup Dutch process coca powder
- 5 ounces (142g) semisweet chocolate, coarsely chopped
- 6 tablespoons unsalted butter, cut into pieces
- 1/4 cup neutral oil, such as vegetable or grapeseed
- 1/2 cup granulated sugar
- 1/2 cup packed dark or light brown sugar
- 1 large egg
- 2 large egg yolks
- 1 1/2 teaspoons vanilla extract
- 3/4 cup all-purpose flour
- 2 tablespoons malted milk powder (optional)
- 1 teaspoon Diamond Crystal kosher salt
- 6 ounces (170g) milk chocolate, coarsely chopped
- 1/4 cup boiling water
Method
- Preheat oven to 350°F and prepare an 8x8-inch pan with foil, pressing it into all corners and coating with melted butter.
- Combine cocoa powder and boiling water to bloom the cocoa, then add the semi-sweet chocolate, butter, and oil, melting gently over simmering water until smooth.
- Whisk in granulated sugar and brown sugar into the melted chocolate mixture.
- Add eggs, vanilla extract, and whisk thoroughly until smooth.
- Incorporate all-purpose flour, malted milk powder (if using), and salt, whisking for about 45 seconds to develop gluten.
- Fold in milk chocolate chunks carefully to avoid melting.
- Pour batter into prepared pan and bake for approximately 30 minutes, until cracks form on the surface and the center is soft but not wet.
- Cool at room temperature, then chill in the fridge for at least an hour to set the texture.
- Cut into 16 brownies and serve.
