  • 1/4 cup Dutch process coca powder
  • 5 ounces (142g) semisweet chocolate, coarsely chopped
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/4 cup neutral oil, such as vegetable or grapeseed
  • 1/2 cup granulated sugar
  • 1/2 cup packed dark or light brown sugar
  • 1 large egg
  • 2 large egg yolks
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 2 tablespoons malted milk powder (optional)
  • 1 teaspoon Diamond Crystal kosher salt
  • 6 ounces (170g) milk chocolate, coarsely chopped
  • 1/4 cup boiling water

Method

9 steps
  1. Preheat oven to 350°F and prepare an 8x8-inch pan with foil, pressing it into all corners and coating with melted butter.
  2. Combine cocoa powder and boiling water to bloom the cocoa, then add the semi-sweet chocolate, butter, and oil, melting gently over simmering water until smooth.
  3. Whisk in granulated sugar and brown sugar into the melted chocolate mixture.
  4. Add eggs, vanilla extract, and whisk thoroughly until smooth.
  5. Incorporate all-purpose flour, malted milk powder (if using), and salt, whisking for about 45 seconds to develop gluten.
  6. Fold in milk chocolate chunks carefully to avoid melting.
  7. Pour batter into prepared pan and bake for approximately 30 minutes, until cracks form on the surface and the center is soft but not wet.
  8. Cool at room temperature, then chill in the fridge for at least an hour to set the texture.
  9. Cut into 16 brownies and serve.
